CURRY SAUCE  


CURRY SAUCE

Ingredients

8oz	onion, sliced
1/4oz	garlic, grated
1/4oz	ginger, grated
1/2tsp	salt
1/4	tin tomatoes
2tbsp	vegetable oil
some	tomato puree
1 tsp   turmeric, 
        paprika, 
        coriander, 
        cumin, 
        gram masala.
        Some water or 
        vegetable juice

Method

1. Put the onion, garlic, ginger ,
1/4 tsp salt and enough water 
into a saucepan. 

2. Bring to the boil. Turn the 
heat down low and simmer  with 
the lid on for 40-45 minutes.

3. Add tin tomatoes and blend 
until perfectly smooth.

4. In another saucepan put oil, 
tomato puree, turmeric, paprika, 
coriander and cumin and cook. 
Add the onion mixture gradually
and cook gently. Add 1/4tsp salt 
and gram masala. Add more liquid 
if necessary.
