CHEESE Cauliflower  

 
CHEESE CAULIFLOWER

serves	2
You wil need 2 gratin dishes
Bake at	180C(fan)for 30 minutes

Ingredients

Cauliflower, cut into florets 

---for the cheese sauce---

1oz	    unsalted butter
1oz	    plain flour
300ml	half milk half 
        cauliflower water 

1 bay leaf
1 oz grated Cheddar cheese
salt and pepper

---for the topping---
breadcrumbs, grated Cheddar
cheese and paprika

---serve with---

2 A boiled egg. Boil the 
egg for 5 minutes .Then
cool it in cold water.
Slice the egg into segments
and serve with the cauliflower.


Method

1. Cook the cauliflower in boiling
salted water for about 10 minutes. 
Drain and arrange in gratin dishes.

2. Make the cheese sauce. Put bay 
leaf in the liquid mixture and set 
aside. Melt the butter over a low
heat. Add the flour and cook until 
the colour becomes paler. Stir 
constantly.  Then add half of the 
liquid and stir until the sauce 
boils and thickens. Gradually add 
the remaining liquid, stirring 
all the time.   Add the grated 
cheese and salt and pepper. 
Add more liquid to adjust 
the consistency and simmer 
gently for few more minutes. 
Remove the bay leaf.

3. Pour the cheese sauce over 
the cauliflower and sprinkle 
with breadcrumbs, grated cheese 
and paprika.

4. Bake at 180C(fan), for 30minutes. 
Serve with the sliced boiled egg.
