COTTAGE PIE  


COTTAGE PIE

serves 4
use 	2 x brown pie dishes
180C (fan)	30minutes

(vegetarians can substitute
the meat with boiled or tin
kidney beans)

--Ingredients--

1tbsp	oil
250g	minced beef
1   	onion, chopped
1	    carrot, chopped 
        into 1cm cubes
some	parsnip, chopped 
        into 1cm cubes
some	swede, chopped 
        into 1cm cubes
1	    celery stick, chopped
1	    garlic clove, crushed
1cup 	peas
1	    bay leaf
1tsp	dried mixed herbs or a
        sprig of fresh thyme 
        and parsley
some 	tomato puree 
some 	worcestershire sauce
some	salt (1-2tsp ?)
some 	pepper
enough	water

--The Topping--

3	large flowery potatoes, 
        such as King Edward 
some 	margarine 
some 	milk(op)
some 	cheddar cheese, grated
some	chopped spring onion 
        and parsley 

Method

1. Fry the onion and celery 
in oil. Add minced beef and 
cook until browned. 

Add carrot, parsnip or swede
and garlic. Pour in enough 
water .Then add peas.
Season with salt and pepper, 
tomato puree and Worcester
-shire sauce. Add bay leaf 
and mixed herbs. 

Bring to the boil and cook
for about 1 hour.

2. Boil the potatoes  and 
mash with margarine, milk 
and some of the cheese.

3. Spoon the meat mixture 
into a dish.Then cover over
with the mashed potatoes. 
Smooth the top and sprinkle 
with grated cheese.

4. Bake at 180C (fan) for 
30 minutes until the pie
is golden brown.
