LENTIL SOUP  




LENTIL SOUP

serves 2

Ingredients

some 	   light olive oil
2oz	   lentil, washed 
1/2 (4oz)  onion, chopped small
1	   celery, chopped small
1	   tomato, quartered
1 	   small carrot, grated
some   parsnip, grated
some   swede, grated
1/2	   garlic, crushed
some   tomato puree
some   mixed herbs
3	   cardamom
1/2	   bay leaf
       salt and pepper 
       enough water

Method

1.Sweat the vegetable and garlic 
with oil. Add lentils, tomato 
puree, mixed herbs, cardamom 
and bay leaf.

2. Add just enough water to cover 
the contents. Then simmer until 
everything is soft.
 
3. Discard the tomato skin and bay 
leaf.Then mush the soup with a
wooden spoon. Add more water and 
season with salt and pepper.
