MUFFINS  


BLUEBERRY MUFFINS

Makes 6 muffins
You will need a	muffin tin, 
lined with 6 paper cases.
Bake at	180C( pre-heated fan oven) 
for 20minutes

Ingredients

5 oz	plain flour
1 tsp	baking powder
1/2tsp	bicarbonate of soda
A pinch of salt
2oz	    granulated sugar
2 1/2oz	blueberries, fresh or frozen
1	    egg(about 2oz)	
4 1/2oz(125ml)	milk
1 1/2oz	oil
1/2tsp	vanilla extract

Method

1. Sift together the flour, baking 
powder, bicarbonate of soda and salt
three times.

2. In a bowl, beat together the egg,
milk, oil, vanilla extract and sugar.

3. Fold in the flour mixture until 
it is just combined. Do not over mix.

4. Spoon the mixture into the muffin
cases and arrange the blueberries 
on top.

5. Bake at 180C for 20minutes 
(A higher temperature if it is a not
a fan oven). Leave the muffins in the
tin for 5 minutes. Then transfer 
the muffins to a wire rack and leave
them to cool.
