Ingredients
2 1/2oz cooked kidney beans
oil for cooking
1 garlic clove, chopped
½ onion, chopped
¼ red pepper, chopped
2 tomatoes, quartered
½ aubergine, quartered
heightways and cut into
chunks
½ courgette, sliced into
chunks
frozen peas
1 bay leaf
dried oregano
1/2tsp sugar
1/2tsp paprika
tomato puree, tomato ketchup, soy sauce,
Worcestershire sauce
salt and pepper
water or drained bean juice
---to serve---
grated Cheddar cheese
boiled rice or baked potato
Method
1. Cook the onion and pepper with
oil. Add aubergine, courgette,
tomato, garlic and seasoning.
2. Add liquid from the cooked
kidney beans.Add peas, bay leaf
and oregano. Simmer about for
30 minutes until the vegetables
are tender. Serve with boiled
rice or baked potato,
sprinkled with grated cheese.
