RICE BAKE  




RICE BAKE

serves	2
need	2 x gratin dishes
rice	boil for 15 minutes 
        Then leave forn15 minutes
bake	180(fan), 30 minutes


Ingredients
---for savoury rice---

2 1/2oz	cooked butter beans
(see how to cook  beans) 
or 1/4 tin of butter beans
1/2cup	washed Basmati white rice
1 1/4cup of water
1tbsp	oil
1	bacon, chopped
1/4	onion, chopped

carrot, parsnip, swede, 
cut into 2 cm heights 
and sliced into thin strips

frozen peas
tomato ketchup, say sauce, 
paprika and salt 


---for the cheese sauce---

1oz	unsalted butter
1oz	plain flour
300ml	half and half liquid mix
        of milk and water 
 
1	bay leaf
1oz	grated Cheddar cheese
salt and pepper

---for the topping---
bread crumbs 
grated Cheddar cheese
paprika 

---serve with---
2 boiled eggs 
Gently boil the eggs for 5 
minutes. Then cool in water
until  they are ready to
peel and chop into slices.


Method

---Cook savoury rice---

1. In a medium size sauce pan
cook the bacon, garlic and 
vegetables in the oil until soft.
Add the rice, tomato ketchup, 
soy sauce, paprika and stir. 
Add water and salt, then 
spread the frozen peas and 
boiled beans on top.

Do not stir. Cover with lid
and bring to the boil. Reduce 
the heat and simmer gently
for 15 minutes.  Turn off the 
heat and leave the lid on 
for a further 15 minutes. 
Fluff up the rice and set aside.

---Cook the cheese sauce---

3. Put milk, water and a bay 
leaf in a jug and set aside. 
Melt the butter over a low heat.
Add the flour and cook until 
the colour becomes paler.
Stir constantly. Then add half 
of the liquid and stir until sauce 
boils and thickens. Gradually add 
the remaining liquid, stirring 
all the time. Add grated cheese, 
salt and pepper. Add more water 
or milk to adjust the consistency
and simmer gently for a few 
minutes. Remove the bay leaf.

---Rice bake---
4. Divide the savoury rice 
into two gratin dishes. Pour 
the cheese sauce over and 
sprinkle with breadcrumbs, 
grated cheese and paprika. 
Bake at 180C(fan), for 30 
minutes. 

Serve with chopped boiled 
egg on top.
