SWEETPOT SOUP  



SWEET POTATO SOUP

serves	2

Ingredients

10oz     sweet potato, peeled 
         and cut into chunks 
         (about 1/2 large potato)
1/2	     onion, sliced
1/2	     carrot, thinly sliced
some	 margarine
enough	 water
enough	 milk
1tsp	 curry powder
         salt and pepper

Method

1. Cook the onion in margarine
until it is soft. Add carrot 
and sweet potato. Add just 
enough water. Bring to boil and
simmer gently for about 30minutes
or until the vegetables are soft.

2. Puree the soup in a food 
processor and return to the
saucepan. Add enough water and 
milk. Add curry power and season
with salt and pepper.
